Chicken Chasseur but make it low fodmap 🍗 This one is really simple, you can use any veg that you like! Full of flavour and full of goodness 😋

Ingredients: (for 4 servings)
4 chicken breasts
2 tablespoons garlic infused olive oil
2 carrots, peeled & chopped
60g mushrooms
2 tablespoons tomato purée
400g tin chopped tomatoes
200ml GF vegetable stock
60g green beans
1 teaspoon dried parsley
1 teaspoon dried thyme
3 bay leaves

Method:
1. Fry chicken breasts in the garlic infused oil for 3 minutes on each side until golden, then add the carrots, mushrooms, green beans and cook for 5 minutes
2. Add the tomato purée and chopped tomatoes, stir and cook for 5 minutes
3. Add the bay leaves, parsley, thyme and GF vegetable stock and let simmer for 5 minutes
4. Transfer the contents of the frying pan to an oven proof dish and cook for 1hr 5mins at 200 degrees until the chicken and vegetables are fully cooked 😋
